- 4-5 bell peppers (any color)
- 1 onion, medium
- 1 lb ground turkey
- 1 can tomato sauce (15 oz.)
- 1 1/2 c cooked brown rice (white will work as well)
- 2 cloves garlic (or 1 tsp garlic powder)
- 1 tsp Italian seasoning
- 1/4 tsp red pepper flakes
- 1 tsp Worcestershire sauce
- 1 cup shredded Mozzarella cheese
- Olive Oil
- Sea Salt ad pepper to taste
Preheat oven to 400°F. Cut bell peppers into 2-3 inch pieces and layer at the bottom of a greased casserole dish. Lightly brush with olive oil.
Bake peppers for 10-15 minutes until softened. (This is optional)
Dice any extra peppers, dice onion and mince garlic.
Heat 1 T olive oil over medium high heat and add onion, garlic and extra peppers. Saute until onions start to become translucent, about 2-3 minutes.
Add ground turkey and cook until cooked to temperature suggested on package.
Turn heat to low and stir in tomato sauce, rice, Worcestershire sauce, red pepper, Italian Seasoning and salt and pepper to taste. Stir to combine.
Pour meat and rice mixture over peppers, place in oven and bake for about 20 minutes (or until a light bubbling starts). After 20 minutes, spread cheese over top and return to oven. Bake for 10 more minutes until cheese is melted.
Remove from oven and allow to cool for 5-10 minutes before serving.
