Un-Stuffed Pepper Bake

Stuffed peppers without the hassle of stuffed peppers!

Ingredients

  • 4-5 bell peppers (any color)
  • 1 onion, medium
  • 1 lb ground turkey
  • 1 can tomato sauce (15 oz.)
  • 1 ½ c cooked brown rice (white will work as well)
  • 2 cloves garlic (or 1 teaspoon garlic powder)
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon Worcestershire sauce
  • 1 cup shredded Mozzarella cheese
  • Olive Oil
  • Sea Salt ad pepper to taste

Instructions

  • Preheat oven to 400°F. Cut bell peppers into 2-3 inch pieces and layer at the bottom of a greased casserole dish. Lightly brush with olive oil.
  • Bake peppers for 10-15 minutes until softened. (This is optional)
  • Dice any extra peppers, dice onion and mince garlic.
  • Heat 1 T olive oil over medium high heat and add onion, garlic and extra peppers. Saute until onions start to become translucent, about 2-3 minutes.
  • Add ground turkey and cook until cooked to temperature suggested on package.
  • Turn heat to low and stir in tomato sauce, rice, Worcestershire sauce, red pepper, Italian Seasoning and salt and pepper to taste. Stir to combine.
  • Pour meat and rice mixture over peppers, place in oven and bake for about 20 minutes (or until a light bubbling starts). After 20 minutes, spread cheese over top and return to oven. Bake for 10 more minutes until cheese is melted.
  • Remove from oven and allow to cool for 5-10 minutes before serving.
