Cinnamon Roll Oatmeal Breakfast Cookies

Ingredients

  • 1 1/2 c rolled oats
  • 3/4 c whole wheat pastry flour
  • 2 T coconut oil
  • 1/4 c butter softened, or more coconut oil
  • 1 egg
  • 1/2 T cinnamon
  • 1 tsp baking powder
  • 1/2 c pure maple syrup
  • 1/4 tsp sea salt
  • 1 tsp vanilla extract

Greek Yogurt Drizzle

  • 1/3 c Greek Yogurt
  • 1 T milk of choice
  • maple syrup to taste

Instructions

  • Preheat oven to 350°F.
  • In a medium bowl, whisk or beat together butter, egg and vanilla. Stir in maple.
  • In another bowl, mix oats, flour, salt, baking powder and cinnamon.
  • Add dry ingredients into wet and mix to combine.
  • Spoon onto parchment lined baking sheet and bake for 9-11 minutes or until golden brown.
  • Allow to cool for 10-15 minutes.
  • For best results, add drizzle just before serving. Whisk ingredients together and add to a small plastic bag. Cut small slit and then drizzle each cookie.
