Apple Cinnamon Baked Donuts

  • 1 egg
  • 1 c whole wheat pastry flour
  • 3/4 c unsweetened almond milk or whole milk
  • 1/3 c Greek Yogurt plain
  • 1/2 c coconut sugar or granulated sugar of choice
  • 1 medium apple I prefer gala or fuji
  • 2-3 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 2 T coconut oil melted
  • 1 tsp vanilla extract
  1. Preheat oven to 350°F.
  2. In a medium bowl, whisk together milk, egg, sugar, vanilla, coconut oil and yogurt.
  3. In a separate bowl, combine baking powder, flour, sea salt, baking soda and cinnamon.
  4. Dice apples small and toss them with a few dashes of cinnamon (and a touch of maple if desired.)
  5. Stir dry ingredients into wet ingredients and then fold in apples, reserving about 1/3 of the apples to top donuts.
  6. Spoon batter into a greased donut pan and bake for about 13-15 minutes or until a toothpick comes out clean.
  7. Cool for several minutes and then dig in!
