Preheat oven to 400°F.
Dice apples. I leave skin on but you can also remove if desired.
Heat 1 T coconut oil over medium high heat in a skillet.
Add apples and maple syrup.
Stir to coat apples evenly.
Add salt, arrowroot and cinnamon and heat until apples are softened and mixture is gooey and thickened.
Remove from heat.
Line a baking sheet with parchment paper and coat with coconut oil.
Fill each egg roll wrapper with about ¼ c apple mixture and fold according to instructions.
Line baking pan and then brush remaining coconut oil to coat each egg roll.
Bake for about 15-20 minutes or until browned to desired darkness.
Remove from oven and allow to cool for 5-10 minutes.
Serve warm garnished with vanilla ice cream if desired.Sprinkle with extra cinnamon before serving.
