Blueberry Lemon Energy Bites

Ingredients

  • 1 1/2 c raw cashews
  • Zest of 1 lemon
  • 1 tsp vanilla
  • 8-10 medjool dates pitted
  • 1/4 c dried blueberries
  • Dash of sea salt

Instructions

  • In a food processor, process cashews until fine and grain like.
  • Add lemon zest, dates, vanilla and sea salt. Process until a dough starts to form.
  • Stir in dried blueberries.
  • Roll into bite sized balls.
  • Chill to set for about 15-25 minutes.
  • Enjoy!
