Blueberry Lemon Energy Bites

Ingredients
1 ½
c
raw cashews
Zest of 1 lemon
1
teaspoon
vanilla
8-10
medjool dates
pitted
¼
c
dried blueberries
Dash of sea salt
Instructions
In a food processor, process cashews until fine and grain like.
Add lemon zest, dates, vanilla and sea salt. Process until a dough starts to form.
Stir in dried blueberries.
Roll into bite sized balls.
Chill to set for about 15-25 minutes.
Enjoy!
