2 Minute Vegan Cinnamon French Toast in a Mug

No eggs? No problem! This Easy Vegan French Toast cooks up in a mug in just two minutes! Even if you are short on time, you can still enjoy this delicious and simple cinnamon French Toast recipe! French toast without can indeed be a thing!

  • In a bowl, whisk all ingredients except for the bread.
  • Chill for about 10-15 minutes to thicken and set.
  • Meanwhile, slice bread into one inch bite sized pieces.
  • Using two small microwave safe mugs, divide the bread evenly into each. (you could also just use one bowl instead)
  • Pour half the chilled mixture over each mug of bread and gently stir to coat all of the bread pieces.
  • Place in microwave and heat for approximately 1 minute and 30 seconds. (microwaves will vary some will need more and some will need less time.)
  • The bread will be fluffy and warm when ready, it may rise slightly as well.
  • Allow to cool for about 30 seconds before removing from microwave and then drizzle with maple syrup and maybe even some berries and enjoy!

Notes

  • Day old bread works best in this recipe. To keep the French toast from turning out super soggy or mushy, use day old or slightly stale bread. It will absorb the liquid without breaking down too much.
  • You could make this vegan French Toast stove top instead of in the microwave. Just dip the bread into the milk and cook to your liking as you would regular French Toast.
  • Add extra flavor with lots of add-ins: Feel free to add fruit, berries, nuts or even chocolate chips to vary the flavor of your French Toast.
  • Microwaves are all different--if your French Toast doesn't seem to be done, microwave it for another 15 seconds or so. The bonus is that none of this is unsafe to eat even if it is slightly undercooked!
