Almond Joy Oat Bars

Ingredients

raw almonds
¼
c
raw cashews
⅔
c
rolled oats
gluten free or regular
¼
c
cacao powder
¼
c
dark chocolate chips
⅓

shredded coconut
unsweetened

medjool dates
pitted

teaspoon
pure almond extract

pure maple syrup
Dash of sea salt
Instructions
In a food processor, process oats, cashews and almonds until a grain like consistency.
Add in chocolate chips and pulse several times to break down.
Add in all other ingredients and process until all ingredients are combined and a dough like consistency starts to form.
Press FIRMLY into a parchment lined pan. (I use a 6x8 or an 8x8 pan and only use about ¾ or the space in the pan.
Chill for about 10-20 minutes before cutting into bars.
Notes
If you prefer, you can always roll these into bite sized balls!
