No Bake Chocolate Coconut Date Balls

These simple no bake Chocolate Coconut Date Balls are a great snack that will keep you fueled and let you enjoy all of the chocolate! Only about 5 minutes to make and an extra chocolate drizzle to make them all the more delicious!

Ingredients

  • ¼ cup dark chocolate chips

Instructions

  • In a food processor, process almonds and pecans until a fine, grain like texture.
  • Add all other ingredients and process until a dough begins to form. (If it seems to be a bit dry, add a teaspoon of water or so and process until the dough forms.)
  • Roll dough into bite sized balls and chill for about 15-20 minutes before serving.
  • Optional: If using chocolate drizzle, melt chocolate chips and stir well. Transfer to a plastic baggie and cut a small slit in the corner. Drizzle over each ball. Allow to chill for about 10-15 more minutes.

Notes

  • Store these date balls in the fridge for about 2 weeks. You can also freeze them for about 2 months.
  • If your dates seem dry, you can soak them in warm water for about 10 minutes before making this recipe. This will help add the needed moisture into the chocolate balls so they hold together well.
  • As long as you use 2 cups of any combination of raw cashews, almonds, pecans or walnuts, you should have success with these bites!
