Pumpkin Spiced Breakfast Soufflé

  • Preheat oven to 350°F.
  • Combine all ingredients into a blender.
  • Blend until smooth.
  • Pour into small 1-2 cup baking dishes greased with a light touch of coconut oil and fill a bit more than halfway.
  • Bake for about 25-30 minutes or until slightly browned around the edges.
  • Let cool for about 5 -10 minutes before serving.

Notes

Feel free to add a touch of maple syrup or honey if you desire a bit more sweetness.
