Sweet Potato Noodles with Chopped Spinach And Thyme

Ingredients

medium sweet potatoes
skins removed
2

chopped spinach
1-2
T
olive oil
¼
c
yellow onion
diced
1-2
garlic cloves
minced
¼
c
pine nuts
¼ - ½
teaspoon
crushed red pepper
3-4
sprigs fresh thyme
sea salt and pepper to taste
Instructions
Using your spiralizer tool, spiralize the two sweet potatoes to the spaghetti like setting, set aside.
In a medium skillet, heat one tablespoon olive oil over medium high heat.
Heat garlic and onion until onion becomes soft and translucent.
Add in sweet potato and spinach and toss to mix together. Heat until spinach is completely wilted. (about 3-5 minutes)
Add in pine nuts and leaves/needles from the thyme sprigs and stir/toss to combine.
Add another tablespoon of olive oil if desired and serve immediately with extra thyme on top if desired.
