Day 10 of 2016, how is yours going so far? I really can’t complain as mine has started off pretty nicely. I recently talked about the fact that resolutions aren’t really my thing but what I do always find myself focusing on moving into the new year is simplicity. It’s sort of a getting back to the basics. Sometimes in life, we (or at least I) are really good at over complicating things. We hold on to things, we live in clutter and piles and stow things (physically and mentally) that we don’t need. So much in our lives just takes up space and that is all that it does.
Your closet can be a really good tell tale sign of just this. You know that shirt, the one you haven’t worn in years but for some reason you just can’t move it to the donation pile. How many more years will it just hold space until you finally part ways with it? 1? 5? 10??? I am pretty sure I have quite a few of these lingering in my closet at this very moment.
So this is the time I find myself finally parting ways with those little things that I hold onto. I can certainly be a pack rat, and not just in the things I own, but in the things I think and even feel.
So how is it that we do it? How do we make things so complex when they are actually quite simple? I think a lot of it has to do with our minds. Our emotional attachments to things and people can stir up a lot in us that we never imagined. A bad break up is pulled along into the next relationship, broken trust forces us to lose faith in everyone we meet, another’s words, whether hurtful or empowering, move on with us each step of the way. We are layer upon layer of the things that happen to us and at the end of it all, it just makes life, well, complicated.
And then comes January one. A day where all of this can be left behind as one would slip out of a coat or jacket–if you will let it, of course. January can be a bit of a spring cleaning of one’s life. A time where you can clear away the cobwebs of what you have kept hidden in the attic of your life for so long. And it really can be as easy as setting that shirt into the donation pile. Take a look at your life, what is it that is serving you, making you happy, helping you be the best version of yourself? And then what in your life is not serving you? Is not making you happy? Is not helping you be the best version of yourself? Notice the latter in your life. Do you see how all of these things are typically what make life so much more complicated? These things could be relationships, fear, self doubt, your job, and so on. But the reality is that there comes a time when even these things need to be tossed.
And what better time than now? A new year, a new beginning. A fresh start and a chance to live in simplicity. And it can literally be as small as setting some possessions in a donation pile and sending it off to Goodwill or as big as cutting out a toxic person in your life. Whatever it is, start the year without all of the extra baggage. Don’t make things more troublesome and complex than they need to be. No one said life is easy, but in all honesty, it really doesn’t always have to be so hard!
Speaking of simplicity, that’s really what my recipes are all about. If it takes too many steps or too many ingredients, then I am moving on to something else. I really don’t feel like the recipes I share are anything extraordinary and I feel that’s the beauty of it. Wholesome and healthy eating really doesn’t have to be a lot of work! It doesn’t have to be so complicated so don’t let it be that way.
I am a firm believer that all things breakfast can and should be eaten morning, evening and night. My husband? Not so much. Over the years I have been able to serve him eggs and toast or pancakes maybe a handful of times for dinner but things are slowly changing. I need breakfast for dinner, and back in my teaching days, the term, “You get what you get, so don’t throw a fit!” In other words, if I am cooking it you are eating it, or you are on your own….. I will let you know how this goes in reality.
How do you rate yourself on omelet making skills? I rate myself whatever the lowest rating you can get. It doesn’t matter what I do, my omelets end up as messy broken blobs. I have watched every video and read up enough to know I just don’t have it. And that is just fine by me, because of frittata. They are the messy cooks version of an omelet. And they are so simple it’s almost silly. You can add any ingredients and that is usually what I do. They tend to be a good clean the fridge out of all the veggies type of meal.
This Roasted Sweet Potato, Spinach + Avocado Frittata has been a personal favorite these days and a staple around my house. I typically roast several sweet potatoes at the beginning of the week to add to other meals for busy weeknights. That’s probably the only catch to this recipe. If you don’t have them hanging around, you have one more step before you get to eat.
My husband got me my new favorite cooking tool: a cast iron skillet. I have been loving it these days and it is perfect for a frittata. The great thing is that there is no chemical coating which allows for healthier, chemical free eating. It’s also oven friendly–great for frittatas! If you don’t have one, invest in one soon! I promise you won’t be sorry!
Roasted Sweet Potato, Spinach + Avocado Frittata
- 3 whole eggs
- 2 egg whites
- 1/4 c yellow onion diced
- 3 large handfuls baby spinach
- 1 cup diced sweet potato lightly coated with coconut oil and roasted at 375°F for about 20-25 minutes
- 1/2 avocado cubed
- Sea salt and cracked pepper to taste
- 1/2-1 garlic clove minced
- olive oil
- Preheat oven to 350°F.
- Whisk together eggs and egg whites until combined.
- Heat a cast iron skillet to medium heat.
- Heat about 1 T olive oil in skillet.
- Add spinach and onions cook until onions are translucent and spinach is wilted.
- Add garlic and stir to combine.
- Stir in sweet potatoes. If they are coming from the fridge, heat for several minutes.
- Pour egg mixture over the vegetables in skillet. Add sea salt and pepper to taste.
- Spread avocado evenly over the dish.
- Move skillet to the oven and bake for about 10-12 minutes or until egg is cooked through in the center.
- Serve immediately with your favorite breakfast (or dinner!) sides.
