I am not a fan of kale by any means. Sure I love my veggies and if something is good for me I will try to add it to my diet. But when it comes to kale chips and anything with this leafy green, I just can’t do it. Trust me, I’ve tried.
The other week, I was at a new restaurant in town that is a clean eating place. It’s really amazing…and super overpriced. I was in a rush and needed something that would be easy to take on the road so I opted for one of the smoothies. When the cashier rang me up, I found out the smoothie must’ve been laced with gold or something because it was $6.50 for a pretty puny sized smoothie. After I left, I was shocked to realize that the smoothie had none other than kale in it. Lovely, I just paid a fortune for something I am not even going to get to enjoy! However, I was pleasantly surprised to find out that I didn’t just like the smoothie, I LOVED it! The price was just not worth it though and I wasn’t going to get hooked to a smoothie I could easily make at home for probably one dollar and some change.
So I accepted the challenge, and I won! I actually went to the store and bought a bunch of kale and put it into my smoothie and it was delicious! I am pretty certain the trick to the smoothie is the lemon juice. If you find it to be bitter, then add more lemon and it really makes the difference. The thing I like best about this smoothie is that it can sit in the fridge for a day and still taste amazing when you pull it out. I have been taking this one to work with me as an afternoon snack and it doesn’t taste old at all after sitting for a few hours.

Drink Your Greens! Smoothie
- 1 cup baby spinach
- 2 stalks of kale
- I medium apple cut into small chunks (I used Gala)
- 1 frozen banana
- Juice of half a lemon
- 1 cup cold water adjust to get your favorite thickness
- Combine all ingredients into a high speed blender or smoothie maker such as a Nutri-Bullet, etc.
- Blend for about 45 seconds and enjoy!
