It’s very clear from all of my recipes that I really love my oats. The long list of benefits of oats certainly seals the deal. They can lower cholesterol, reduce the risk of heart disease, lower blood pressure and more. The best part is that they taste good and there are so many ways to add them to your diet.
When we hear the word “granola” we automatically think it’s got to be healthy, right? Not entirely true. Not all granolas add up when it comes to nutritional value. For starters, many are loaded with sugar. Nature Valley’s Oats ‘N Honey Granola has sugar listed as its second ingredient! How can that be nutritious? The other problem is that the lists of ingredients often contain things we have never heard of. Any idea what Refiner’s Syrup is? Oh, it’s just a new name for High Fructose Corn Syrup. Very sneaky!
I like to know what is going into my food. What better way than to make it myself! Granola is really so simple to make. It’s a matter of mix and then bake. Plus you can save some money while you are at it!
This Coconut Almond Granola is sweetened with 100% Pure Maple Syrup. Maple syrup is my favorite sweetener. I know that there are those that say sugar is sugar, but I prefer to get it from the most natural and least refined source. I once had someone tell me that eating a banana is just as bad as eating a Snickers Bar. I am not so sure about that one. I try my best to avoid refined sugar and so sweetening with maple or honey is the way to go for me.
The versatility of granola is also why I love it so much. You can eat it plain, stir it into yogurt, eat it as cereal with milk, throw it over ice cream and more! This one doesn’t last long for me though so I may need to double the batch next time!
Coconut Almond Granola
- 3 c rolled oats regular or gluten free
- 1 cup sliced almonds
- 1 1/2 cup flaked coconut
- 1 T vanilla extract
- 1 T cinnamon
- 1/3 cup maple or honey
- 1/2 cup coconut oil liquified
- 1/4 tsp Sea Salt
- Optional add-ins: pecans 1/2 cup ground flax
- Preheat oven to 300° F.
- Combine all ingredients in large bowl and make sure everything is coated evenly. If you prefer more cluster like granola, add in another 2-3 T maple syrup.
- Spread granola evenly over a cookie sheet lined with parchment paper.
- Bake for about 40-45 minutes, shifting or stirring the granola around a bit every 15 minutes.
- Let granola cool completely before serving.
- Store in an airtight container.
