Food Myths–gotta let them go
Even though I have completely changed my relationship with food over the past several years, there are still times when old habits and ways of thinking try to sneak back in. The biggest culprit of these being the myth that I have to actually “earn” my food.
For so many years, I lived by the rule that I had to earn my splurges and indulgences. If I wanted to indulge in a treat, I had to “work” for it. So ultimately in order to have a bowl of ice cream on a given day I would have to make sure I either had worked out hard or that I had eaten “good” that day.
“Good” ultimately meant I had made all healthy choices, or what I thought were healthy choices at the time, and had not strayed from the standard of perfection for the day.
Looking back to those times, it makes me exhausted, and honestly pretty sad that I lived that way for so long. But for some reason, that way of thinking is very common for so many of us. So much that it is quite contagious if you are around people who may have the same tendencies to think this way.
This all goes back to the fact that we so often connect food with guilt. We feel guilty for eating that piece of chocolate cake because we didn’t do anything to earn it that day. We feel guilty because we skipped a workout so we try to restrict what we eat because again, we didn’t work for it.
This is such an awful way of thinking when it comes to our relationship with food but how many of us are completely guilty of it?
Seriously, You don’t earn it!
Let’s get one thing straight: you DO NOT “earn” your food!
Regardless of whether you work out or not today, your body still needs to be nourished. You still need fuel and energy to get through your day. You don’t have to earn it or work for it in any way, shape or form. The only requirement for eating is that you are alive. You don’t have to restrict or “be extra good” today because you didn’t get your morning run in.
I think this post may be more of a reminder for myself today, but maybe it’s something you needed to hear as well. Be nourished, be whole and be good to YOU.
A little meal prep changes everything
When we don’t fuel ourselves, this is where we get ourselves into mind games with food. These are the times that we find ourselves eating mindlessly or binge eating. Planning ahead can help in these situations.
Dinner is always one of those times that I find myself exhausted and not in the mood to think too much. The crock pot is my very best friend in these cases–especially for these simple Slow Cooker Chicken Burrito Bowls!
Slow Cooker Chicken Burrito Bowls to the rescue!
These Slow Cooker Chicken Burrito Bowls are the answer to a good meal without having to think or work too much. There are a few tips as well that can help you get these ready in a flash if time is an issue.
You throw everything in the crock pot in the morning and then make some rice when you get home and poof! dinner is ready. You can keep it meatless by adding a can of pinto beans or kidney beans instead of chicken.
Dairy free? Skip the cheese or make a cashew cream to pour over. What you add to your bowl is really up to you! Avocado, guacamole, tomatoes, cheese, tortilla chips, salsa, Greek yogurt, etc. The list really goes on.

What you need to make these Slow Cooker Chicken Burrito Bowls:
- chicken tenderloins: these cooke up a bit quicker so that’s what I opt for in this recipe. Chicken breast will work as well, you just may need to add a bit more time to cook.
- black beans
- diced tomatoes
- green Chile pepper: you could use a jalapeño for more spice
- red onion
- chili powder
- lime juice: I prefer freshly squeezed, but if you don’t have a fresh lime, it’s ok!
- crushed red pepper: use at your discretion. Add it slowly!
Get out that slow cooker and get to it! You should be all set!

Slow Cooker Chicken Burrito Bowls
For Slow Cooker
- 1 1/2 lb. chicken* breast tenders
- 1 can or 2 cups black beans rinsed
- 1/2 cup corn kernels
- 1 can diced tomatoes
- 1 large green chile pepper diced
- 1/4 cup red onion diced
- 2 garlic cloves or 1 tsp garlic powder
- 1 T chili powder
- 1 T cumin
- 1/4 tsp crushed red pepper optional
- 1 T lime juice
- Sea Salt to taste
- *Making it meatless? Add an extra can of beans or mix it up and add kidney or pinto beans instead of extra black beans.
Burrito Bowl Contents/Extras
- 2 cups cooked rice in a rush? Use frozen!
- 1 avocado
- lime wedges
- 1 roma tomato diced
- Romaine lettuce
- shredded cheese
- In a crock pot, combine all ingredients and stir. Make sure the chicken is completely covered by the tomatoes and beans in the end.
- Allow to cook for about 4-6 hours on low or 2-3 hours on high.
- About 30 minutes before eating, turn to warm and, stir to allow the chicken to shred. It should very easily come apart when stirring.
- Prep all of the desired bowl ingredients and then add mixture from crock pot to each bowl and top with your favorite ingredients!
