Smoothie season is back and in full effect and I couldn’t be more happy!
I have had my Vitamix for about 6 months now and I think I may finally have a handle on it. I have had my go at a fair amount of way to thick and way too thin smoothies but feel like I can eyeball it well enough that nothing will go too wrong. There really is nothing worse than a smoothie that is the same consistency as water. Yuck.
There is a science to smoothie and I am slowly nailing it with my super high tech machine and it feels good. The great thing about smoothies as we all know is that we can put things into it that we know are healthy but that we would never eat as is. Chia seeds for one. No one sits and munches on chia seeds–it’s actually not recommended as they can expand in your throat and cause difficulty breathing. You won’t find anyone sitting down just eating a spoonful of maca powder, hemp seeds, etc. These are those things that get the tagline of “Super Foods” but most of these highly nutritious foods are not highly tasty. Thus, the smoothie allows you to add these things to your diet quite easily!
But a smoothie should still taste really good. So if it doesn’t because you have basically made a thick mix of maca, chia, goji berries, spinach and hemp seeds, well, just move on, it’s not worth it!
I have been keeping blueberries in my freezer pretty consistently these days and they end up in most of my smoothie recipes, just like this one! The addition of coconut water to this smoothie packs in lots of potassium as well as natural electrolytes. Coconut oil also adds a bonus by kicking the metabolism into drive. Hemp seeds add some more protein and other nutrients and then your greens are a no brainer! This has been one of my recent go-to smoothies. If you prefer a bit more creaminess in your smoothies, half the amount of coconut water and sub the other half with your milk of choice. Other then that, it’s as simple as blend, serve and enjoy!
Blueberry Coconut Smoothie
- 1 1/2 frozen banana
- 1 1/3 c coconut water
- 1/4 c shredded coconut unsweetened
- 1 c blueberries fresh or frozen
- 2 c leafy greens
- 1 T coconut oil
- 1 T almond butter
- 1 T hemp seeds
- Combine all ingredients in a high powered blender and blend until smooth.
- Serve immediately.
