Nutella Ritz Cracker Cookies: The holiday treat you need. The perfect sweet and salty treat!

These Nutella Ritz Christmas Cookies are an easy no bake sandwich cookie with the most fun holiday look! An easy recipe that will wow this holiday season!

A touch of red and green sprinkles makes them all the more fun! Pro-tip: make these with red and white sprinkles for Valentine’s Day too!
  • You can make them gluten free if needed! Grab some gluten free crackers and you have yourself another option for those in your family who can’t tolerate it.

Recipe Ingredients:

  • Ritz crackers: classic Ritz crackers are out favorite, but you can certainly use a store brand version. You can also make these gluten free with a gluten free cracker with your favorite buttery cracker. We always have a box of Ritz crackers on hand so this is one thing I know I can make in a pinch!
  • Nutella: same as with the crackers, you don’t have to use the name brand. Any chocolate hazelnut spread should work. You can change up the spread to a chocolate almond butter, peanut butter or another favorite! Chocolate cashew butter is great too!
  • white chocolate: white chocolate can be very tricky. If you over heat it even the slightest, it is essentially ruined. Use a high quality white chocolate or melting wafer or white chocolate coating for best results. Sometimes it even gets finicky when adding any liquid like an extract as well so keep it to a minimum with the peppermint extract as well!
  • peppermint extract: just a touch goes a long way. You shouldn’t need more than 1/4 teaspoon
  • holiday sprinkles: red and green sprinkles for a festive Christmas look. You don’t have to stop there though, make these Ritz Christmas cookies beyond the season and decorate with any color sprinkles that makes sense for all your special occasions!

Step-By-Step Instructions:

  1. Arrange the crackers on a parchment lined baking sheet flat side up, or two if you have a small sheet.
  2. Spread 1 1 1/2 teaspoons Nutella on each cracker. (If your Nutella is a bit runny, freeze it for about 10 minutes before spreading.
  3. Place another cracker on top of each cracker with the chocolate hazelnut spread. Put the tray in the freezer for about 15 minutes to help the Nutella stiffen and set before dipping in white chocolate.
  4. Once the crackers have chilled, warm up white chocolate until melted–make sure not to overheat it or it will seize up and become thick and you won’t be able to work with it. I microwave in in a microwave safe bowl in 20 second increments, stirring each time until almost melted and then stir the rest to completely melt.
  5. Add the peppermint (just a touch or it can also make the chocolate too thick.) and stir.
  6. Dip each Ritz cracker cookie into the white chocolate halfway. Allow the excess chocolate to drip off and then place back on parchment lined baking sheet and add festive sprinkles if desired. Allow to set and then you are ready to dig in!

Recipe Tips:

  • White chocolate can seize up very easily. While you can microwave to melt the white chocolate, I honestly have way better results using the double boiler method. When I use the microwave, I find the chocolate is never quite as smooth and I am really good at over doing it and ending up with scalded chocolate.
  • You could opt for another nut or seed butter if preferred. While I highly recommend you stick with the Nutella in this Ritz crackers cookie recipe, I am sure another nut butter would work–the chocolate in the Nutella is just a perfect compliment to the peppermint mixed in with the white chocolate. If you try something else, let me know!
  • For best results, keep these “cookies” in a cool place. If Nutella becomes too warm, it will start to ooze out of the crackers. You can store them in a cool area, something a bit colder than room temperature, or keep them refrigerated to help keep the Nutella more sturdy.
  • Think beyond Christmas! These can very easily be adjusted to any season or holiday. Change the color of sprinkles and perhaps leave out the peppermint and these are instantly a year round treat!

Storage:

Store in an airtight container in a cool spot in your home for about 1 week. You can refrigerate to keep the nutella more solid. You can also freeze these Ritz cookies for up to 3 months.

Place layers of wax paper between cookies when storing so they don’t stick together.

Ways to Vary These Nutella Ritz Cracker Cookies:

  • use a different kind of chocolate to dip–dark chocolate is amazing and even milk chocolate!
  • sprinkle with chopped hazelnuts instead of or in addition to sprinkles
  • sprinkle with chopped peppermint bark instead of sprinkles
  • add a sprinkle of flaky sea salt
  • add a drizzle of caramel with the Nutella
  • dip the entire cookie in the melted chocolate
  • use peanut butter, cashew butter or almond butter instead of Nutella
  • spread marshmallow cream over the Nutella before sandwiching the cookie

White Chocolate Nutella Ritz Crackers Cookies

Ingredients 

  • 48 Ritz crackers
  • ¾ c Nutella (approx. 1 ½-2 tsp. per sandwich)
  • 12 oz. high quality melting white chocolate, (about 2 cups)
  • 1/4 tsp peppermint extract
  • holiday sprinkles or crushed candy canes

Instructions 

  • Spread about 1-2 tsp Nutella onto the flat side of a Ritz cracker. Sandwich this cracker with another and place on a parchment lined pan or plate. Repeat for the rest of the crackers and place in the freezer for about 10-15 minutes or so.
  • While freezing, using a double boiler method (or microwave method if preferred), melt white chocolate until smooth, stirring frequently. If microwaving, heat in 20 second increments at 50 percent power and stir each time.
  • Once melted, stir in 1/4 tsp peppermint extract.
  • Dip each Nutella sandwich half way into white chocolate and allow extra to drip off. You can use a spoon to help spread evenly as well. Place on parchment and sprinkle with holiday sprinkles or candy cane pieces. 
  • Repeat with the remaining sandwiched and allow white chocolate to cool and harden. You can place in the refrigerator to speed this up as well.
  • Enjoy!
