French toast is amazing, but what does one do if they can’t have eggs?!

Since I made these Egg Free Chocolate Chip Cookies that are all the rage with even egg eating readers, it was only right to have another egg free recipe to enjoy. French toast without eggs? No problem!

And in a mug cooked up in two minutes? Wow!

  • It is egg free–and still tastes amazing.
  • So simple to whip up on busy mornings.
  • An easy way to enjoy French Toast “on the go.”
Easy Vegan French Toast

Ingredients and Substitutions:

  • bread: use whatever you love. For best results, day old or slightly stale bread will make for less soggy vegan french toast. You can leave the slices of bread out to sit overnight. You can make it gluten free, whole grain or anything else in between!
  • almond milk: really any milk will work. So if you want to use another dairy free milk or even regular milk, you should be just fine!
  • flax: this is what will act as the egg substitute. It will thicken up the milk mixture to help make this french toast without eggs a success.
  • cinnamon: totally optional but I love cinnamon in my French Toast!
  • vanilla: another thing that I LOVE when making French Toast. Adds great flavor.

How to make this vegan mug French Toast recipe:

Start by whisking together the milk, flax, cinnamon and vanilla vigorously. Chill for about 15 minutes to help it thicken.

While the milk and flax mixture thickens, slice the bread into bite sized pieces. Divide the bread into two microwave safe mugs. You can also just use one large bowl.

Pour the milk mixture over the bread and stir to allow it to soak up the milk. Microwave for about a minute and a half and allow to cool slightly before serving!

Expert Tips:

  • Day old bread works best in this recipe. To keep the French toast from turning out super soggy or mushy, use day old or slightly stale bread. It will absorb the liquid without breaking down too much.
  • You could make this vegan French Toast stove top instead of in the microwave. Just dip the bread into the milk and cook to your liking as you would regular French Toast.
  • Add extra flavor with lots of add-ins: Feel free to add fruit, berries, nuts or even chocolate chips to vary the flavor of your French Toast.
  • Microwaves are all different–if your French Toast doesn’t seem to be done, microwave it for another 15 seconds or so. The bonus is that none of this is unsafe to eat even if it is slightly undercooked!

2 Minute Vegan Cinnamon French Toast in a Mug

Instructions 

  • In a bowl, whisk all ingredients except for the bread.
  • Chill for about 10-15 minutes to thicken and set.
  • Meanwhile, slice bread into one inch bite sized pieces.
  • Using two small microwave safe mugs, divide the bread evenly into each. (you could also just use one bowl instead)
  • Pour half the chilled mixture over each mug of bread and gently stir to coat all of the bread pieces.
  • Place in microwave and heat for approximately 1 minute and 30 seconds. (microwaves will vary some will need more and some will need less time.)
  • The bread will be fluffy and warm when ready, it may rise slightly as well.
  • Allow to cool for about 30 seconds before removing from microwave and then drizzle with maple syrup and maybe even some berries and enjoy!

      Hi! My assumption is that it may have been overcooked. Microwaves vary in how they cook and you may have a pretty powerful one. Sorry it didn’t turn out!

    Hi! This sounds amazing, I have just one question though. I hate having to grind up flax, so for most things I just substitute chia. Do you think using chia would work, or should I just stick with the flax?

      Hi! I imagine chia may work, you just may have more of a seed texture from them. I would say if you use it regularly as an egg sub, then if should work, just not sure how you feel about the gelled chia seeds!
