It’s finally felt and looked like spring around here this week and I have been stuck with a lousy cold. The flip flop of cold and then warm here in Cincy doesn’t help one bit. I have been stuffed up all week, but today I am starting to see a light at the end of the tunnel. I even got out for a little walk with the dog. It was just what the doctor ordered.
I am loving my latest way to add more vitamin C to my diet as it involves chocolate. And since I am nursing a cold, don’t you think I am in need of even more vitamin C?
I have loved making chocolate mousse with ripe avocados for quite some time now. The texture, the flavor, and the richness will have you asking if it’s too good to be true–but it’s not. You can have this rich dessert in all of it’s glory and feel so good about all the goodness you are putting into your body. But the best part to me is that you can have this dessert in literally minutes. Who has time to wait around when a chocolate craving sets in?
I remember growing up and going to nice restaurants with family where they gave out these orange candy sticks dipped in chocolate. I loved them so much. And when I tasted this Chocolate Orange Mousse, I went straight back in time. I wonder if they make those candies anymore. If not, I will be just fine with this treat!
- 2 very ripe avocados
- 4 T cacao powder
- 3-4 T pure maple syrup or honey
- 1 tsp vanilla extract
- 1-2 T freshly squeezed orange juice
- 1 tsp orange zest
- Dash of sea salt
Combine all ingredients into a food processor.
Process until very smooth and mousse like. Add more sweetener or orange juice to taste.
Chill for at least 20 minutes before serving.
Serve garnished with an orange slice or chocolate shavings. Enjoy!
