You know I couldn’t go through fall without a pumpkin inspired energy bite, right?! Fall is my very favorite season and pumpkin pie is my very favorite pie so be prepared for even more. Call me crazy, but I am not a Pumpkin Spiced Latte kind of girl, I know, I know, I just don’t dig them. But pretty much everything else that includes pumpkin is my kind of thing!
Larabars are my favorite grab and go bar when I am in a pinch and need a quick snack. I don’t know of any other energy bar out there that contains only a handful of perfectly recognizable ingredients. They are completely no nonsense. They usually come out with seasonal flavors but I haven’t seen a pumpkin spice version at all yet this year. Not to worry, I went ahead and made my own!
For those who just don’t get the whole pumpkin craze, the health benefits of pumpkin are pretty amazing. Pumpkin is a cancer fighter, improves heart health, and helps with eye function. Pumpkins also can be known to give us a mood boost–most people who love Pumpkin Spiced Lattes will concur with this at the first stroke of fall! And if that is not enough, pumpkins help boost our immune systems and just in time for cold season, right? So there is actually a lot of value to adding pumpkin to your diet and they just so happen to be in season now!
If you are a pumpkin lover, you will love these Pumpkin Pie Energy Bites for sure. This recipe is another that is gluten free and dairy free. No added sweeteners because these are naturally sweetened with dates. I imagine that if you are a big fan of Pumpkin Spiced Lattes that adding a tablespoon of strong brewed coffee then you may be very pleased as well!
- 1 cup raw almonds
- 1/2 cup raw pecans
- 1/2 cup raw cashews
- 8-9 medjool dates pitted
- 1 tsp vanilla extract
- 2 T pumpkin puree
- 1 tsp cinnamon
- 1/4 tsp cloves
- 1/4 tsp allspice
- 1/4 tsp ginger
- 1/8 tsp nutmeg
- Dash of sea salt
Combine all nuts in food processor and process until a fine, grainy consistency.
Add all other ingredients, and process until a dough begins to form.
Roll into bite sized balls and chill for about 20-30 minutes to set.
If these seem dry at all, add a bit more pumpkin puree!
