I am going to be away and unable to get to the computer for a few days or so over the next week. I have gotten a bit behind on recipe sharing so I am trying to get a few ready before I leave so you will have something tasty to look forward to still! Obviously, not a lot of depth to these posts but after I get back I am sure I will have a lot to say. I am going away for a seminar that will dive deep into who I am as a person, goals and basically being the best version of myself. So enjoy these light and airy posts while they are here! Ha!
I didn’t realize how amazing sweet potatoes were until a few years ago. One of the reasons was because I don’t think I ever tasted actual sweet potatoes before. This veggie tends to be doused with sugar, marshmallows and all sorts of gooeyness that it’s a bit overwhelming. Don’t get me wrong, that gooeyness can be wonderful but only so much. Sweet potatoes themselves are packed with vitamins and nutrients. They are high in vitamins A, B6 and C. Sweet potatoes are high in potassium and can also help boost immunities. The list goes on but my favorite part is how they taste!
I typically will roast a few sweet potatoes a week during the colder seasons. I keep them on hand so I can toss them into salads, rice dishes or have them as a side or snack. I had an extra baked sweet potato in the fridge this week and so I wanted to use it up. I have made a pumpkin pie smoothie before so I thought I would try a sweet potato version. This turned out thick and creamy with just the right amount of spice. The sweet potato gives this the natural thickness that I love in a smoothie. You can adjust the spices in this to your taste but all I needed was a dash of each and I was set. The chia seeds add a little extra fiber and protein. Go ahead and have a sip of sweet potato pie! Mmmm.
- 1/2 cup sweet baked sweet potato flesh
- 1 1/2 frozen banana
- 1 cup milk of choice
- 1 T chia seeds
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- 2 tsp maple syrup honey or 1 medjool date pitted
- Dash of ginger nutmeg, and cloves
Combine all ingredients into high powered blender and blend for about 45 seconds - 1 minute
Serve and enjoy!
